Cooking Definitions

Vermicelli There are different types of vermicelli but all are fine types of pasta. In fact the name "vermicelli" is Italian for little worms!

Italian vermicelli are thin strands of pasta made from dough. The strands are often coiled into nests. They are typically served as boiled pasta with a sauce.

Chinese vermicelli is made from Soya bean flour which is fried or boiled then added to vegetable dishes or soup.

Vinaigrette A salad sauce of vinegar, oil, pepper and herbs.

Vol-au-vent Round case made of puff pastry filled with meat and vegetables.
