Pilchards and Rice Toasted Sandwich Recipe for the Diablo |

If you like pilchards or sardines then this recipe is for you. Pilchards
in tomato sauce, cooked rice and a sprinkling of curry powder or chopped chillies make an
ideal toasted sandwich .

INGREDIENTS
Two slices of brown bread.
Half a can of pilchards or sardines in tomato sauce
60g / 2oz rice
Handful of pine nuts
Pinch of curry powder
Knob of butter
Salt & pepper
PORTIONS
1 toasted pilchards and rice sandwich.
TIMINGS
Eight minutes (four minutes each side).
PREPARATION
Cook the rice as per the packet instructions
Place the Diablo on a heat source to pre-heat it
Mush up the pilchards / sardines well with a fork.
Add the cooked rice and remaining ingredients to the pilchards and mix in well.
Butter one side of both pieces of bread

Place one piece of the bread, buttered side down, in the Diablo. Pile about half
the filling mixture onto the bread in the Diablo.
Place the other slice of bread on top of the filling, buttered side up. Close the
Diablo ans scrape of any excess bread with the blunt side of a knife.
Cook on a medium heat, four minutes each side. Check the toastie regularly, it is
ready when both sides of bread are golden brown. |
