Very familiar it may be but the classic ham and cheese toasted sandwich still remains very popular. We used regular Cheddar cheese but most hard and semi-hard cheeses work well.
The advantage of cooking your ham and cheese toasties in a Diablo is that it weighs only 376g and is much, much smaller than a weighty sandwich toaster. It can even be used on a barbecue so no need for electricity. A campers (caravan and morhome as well) dream cooker.
Two slices of bread
2oz / 60g Cheddar cheese grated
1 slice of ham
Knob of butter or margarine
Mustard (optional)
Grate the cheese and chop up the ham.
For a crisper bread, spread butter on one side of each slice of bread. If you like mustard. spread a little on the other side of each piece of bread.
Start preheating the oven top to medium with the Diablo on it to warm it up.
Mix the cheese and ham filling.
Cut off the corners off the bread.

Place one slice of bread in the Diablo buttered side down. Place the filling on the bread, cover with the other piece of bread buttered side up. Clamp the Diablo shut and remove the excees bread outside the Diablo with the blunt side of a knife. Cook for 3 to 4 minutes on each side, turning every minute or so.
The sandwich is ready when the bread is lightly browned.
Open up your Diablo, let the toasted sandwich fall out onto a plate and eat immediately!
