 Cheese, Onion and Pickle Toasted Sandwich Recipe for the Diablo

Cheese, onion and pickle makes a great combination for a toasted sandwich. Add as much or as little onion and pickle as you like.

INGREDIENTS
Two slices of white or brown bread.
Quarter of a medium onion.
60g / 2 oz of cheese, cheddar is a good choice.
Teaspoon of pickle, we used homemade tomato pickle

PORTIONS
1 toasted cheese, onion and pickle sandwich.

TIMINGS
About four minutes each side on a pre-heated Diablo toaster.

PREPARATION
Grate the cheese.

Top and tail then peel the onion. The unused part of the onion will store in a plastic bag in the fridge for several days.

Mix the cheese, onions and pickle

Cut off four corners from the slices of the bread.

Pre-heat the Diablo on your cooker, stove or barbecue.

COOKING

Uncooked cheese, onion and pickle sandwich Easy as pie! Simply place one slice of bread in the Diablo, pile up the cheese, onion and pickle filling (the higher the better!) and then place the other slice of bread on top. Clamp down the Diablo closed and trim off any excess bread.
Cook for about 4 minutes on each side but turn every minute or so and open the Diablo every couple of minutes; the toasted sandwich is ready when the bread is toasted golden brown.

Serve and eat immediately. Garnish with sliced tomato and lettuce if you have any.
