Bacon, Mushroom and Cheese Toasted Sandwich Recipe for the Diablo |

This is so delicious that you may as well plan to cook two of them right
from the start! They do require the mushrooms and bacon to be fried off first but it's well
worth the effort.

INGREDIENTS
Two slices of brown bread.
Four slices of streaky bacon
Four medium sized mushrooms
30g / 1 oz cheddar cheese
1 tablespoon of olive oil
PORTIONS
1 toasted bacon, mushroom and cheese sandwiches.
TIMINGS
Preparation: 2 minutes
Cooking : 16 minutes (initial fry of bacon and mushrooms then four minutes each side).
PREPARATION
Peel the mushrooms and slice them.
COOKING

Put the bacon and mushrooms in a pan, add a tablespoon of olive oil and fry on a
medium heat for around eight minutes until the bacon starts to crisp. Turn the bacon
a couple of times.
When cooked, remove from the pan and allow to cool for a minute. Mix all the
ingredients together and pile them on a slice of bread on the Diablo. |
Place the other slice of bread on top and clamp the Diablo closed. Cook on each side for
about minutes until the bread is golden brown.
