Spanish cuisine relies strongly on local produce bought daily for freshness. Paella is of course the most famous dish but tapas are also very popular.

SPANISH CHICKEN AND MASH
Simple to cook, a feast for the eyes and very tasty. Chicken fried in garlic infused olive oil and pimenton served on a bed of mashed potatoes. Garnish with strips of red pepper and fried garlic.


LENTIL AND HAM BROTH
A delicious and filling recipe from the North of Spain. If cost is no object then use traditional Serrano ham and Pardina lentils although we suggest cheaper alternatives as well.


CHORIZO & CHICKPEA SOUP
Chorizo and chickpeas compliment each other in this typical Spanish soup. Chorizo adds flavour whilst the chickpeas absorb it and add texture. Superb as a starter or as a main meal with bread and a salad.


SPANISH OMELETTE
Simple but delicious. A Spanish omelette (called a tortilla) is a potato and onion omelette cooked very slowly. It's delicious hot but also delicious cold, especially for breakfast.



GAZPACHO
If you thought there was only one Gazpacho soup recipe then think again. Almost every town in Spain has their own Gazpacho recipe and some are remarkably good. Better than the most popular gazpacho we all know.



PAELLA
Surely one of the most colourful and spectacular recipes in the world. We have lots of information about paellas and paella recipes to make them as enjoyable as possible.



CHORIZO AND LENTIL STEW
Lots of chorizo and lentils form the base of this stew. Simple to make but full of flavour. Turn it into a soup by adding the water used for cooking the lentils.
