Absolutely great tasting and amazingly simple.

I added in thyme and 2 potatoes, cut into small chunky pieces, bring to boil and until cook in the broth.

Then add them together into the mushroom, bring to boil and blend everything.

Soup becomes very tasty, thick and absolutely delicious.

Thanks. I bought a whole load of half price steak mushrooms from LIDL 6 months ago and chopped and froze them. I've just put them into this recipe. I haven't put the cream in as I will add it tomorrow when it is reheated for serving and it is already delicious. I used one Kallo veg stock cube instead of two as that's all I had left and it's perfect. Similar to Covent Garden soup but better IMHO.

EXCELLENT, followed the recipe to the letter, I panicked a bit when it came to adding the mushrooms to the onions and garlic as there didn't seem to be enough liquid in the saucepan but they soon reduced down and everything was fine.
Will definitely be making this again, also the celery soup which I made  yesterday, equally as good (Jamie Oliver move over).

I first tried  this recipe with half the amount of mushrooms as I am quite new to cooking. Was amazed by the result! I just re-did it now with 500g mushrooms and its delicious. However I think I'll try cutting down on butter and cream to make it healthier!

Awesome soup! it taste great! I even write a review in my blog!! I followed everything except mushroom, I use 300 and the chicken stock I adjust accordingly due to the reduce in mushroom quantity. It still tastes nice though Ii didn't blend the mixture at the end.

Best mushroom soup that I've tried. I vary the types mushrooms to make it taste even better and you can use potato flour as a thickener if you want to serve it to those who are wheat and gluten intolerant.

I am surprised by the conversions from metric to imperial. Ilb (imperial is only 454gms metric. 3 oz is 84 gms - o.k not a big difference here, I litre is 1.75 pints not two and 1/2 cup is an American measurement not metric. Four discrepancies is such an easy recipe with not many ingredients looks a little careless.
Answer: Rather than give exact measurements (e.g. 84g) as you suggest, we have rounded them. And if you notice, we have rounded all the key ingredients in the same direction. The effect is that you will get a slightly larger portion size of the metric compared to the imperial but the mixture itself will be the same.

An absolutely delicious and simple recipe.  Never fails to please, either for a simple lunch or a posh dinner party.  I always add some very thin slices of mushroom just before serving. Put the soup dishes straight into soapy water after eating to stop the dregs from drying on as they are a devil to get off even in a dishwasher.

Delicious Mushroom Soup. I added some thinly sliced mushrooms and some cooked chicken after returning the soup to the pan and simmered it for about 15 minutes.

I used this recipe to help me with Weight Watchers. I just halved the butter and used Weight Watchers Creme Fraishe and this made 5 portions
of 2 point soup! This recipe helped me to lose just over a stone in 4weeks!! Thanks a lot!! I've been telling all my friends about this delicious recipe!!

I just made this soup; but with only 1 onion and .75 litre of chicken stock and .25 litre of wine (well a good splash of wine; I don't actually know if it was exactly a .25ltr of wine).  It tastes fantastic;
everyone has loved it!  Oh I missed out the cream too; cos we're all dieting here for Xmas!  :o)

Great mushroom soup recipe! A nice variation is to substitute a couple of jars of antipasti artichokes (tender enough to eat from the jar) for some of the mushrooms, and to add a little truffle-infused oil if you have it.
