and vegetables. Lamb, chicken and rabbit are the commonest meats. Generous portions
of herbs and spices are also typical.

GREEK SALAD
Our traditional recipe for Greek Salad. Perfect on a summer day, especially if you are
serving barbecued food. This is a substantial salad which can also be a meal on its own
if served with chunks of bread. |

KOFTAS
Koftas are a mixture of Greek and Turkish cuisines. Minced lamb is
mixed with herbs and spices then placed on a skewer. Cook under the
grill or on a barbecue. Drizzle over our yoghurt sauce. |

from Greek yogurt, cucumber and herbs. |
