Tzatziki is a Greek dish served as a side dish in many Greek
restaurants. It has a refreshing taste which makes it ideal for serving
with fatty meats such as lamb.

INGREDIENTS

250g Greek yogurt |
9oz Greek yogurt |
1 medium sized cucumber |
2 garlic cloves |
2 tablespoons extra virgin olive oil |
1 tablespoon of white wine or cider vinegar |
1 tablespoon chopped mint |
1 tablespoon chopped dill or chives |
Salt and pepper |
Method
First, peel the cucumber then slice it in half as shown in the picture.
Remove the seeds from the middle of the two slices. If you leave the
seeds in, the tzatziki will be have a rather runny texture. |

Cut the cucumber into roughly 2cm (1 inch) cubes. |
Finely slice and chop the garlic. Add all the ingredients, except the dill
/ chives to a bowl and mix it all together with a fork. Sprinkle the
dill / chives in the top and serve as a dip along with chunky bread |
