Slow Cooker Lamb Stew Recipe |

This is recipe is based on an Italian lamb stew recipe. Lots of tomatoes with rosemary make
a great combination. Choose from the basic recipe or the one-pot version. |

COOK'S NOTES ON LAMB STEW
The recipe below makes an excellent lamb stew. If you want to make a one-pot meal then
simply add the optional one-pot ingredients shown below the main ingredients.

WHAT SPECIAL KITCHEN EQUIPMENT?
Slow cooker.
Large frying pan.

PREPARATION
Turn the slow cooker onto high heat so that it is warm when the ingredients are
added.
Chop the onions finely.
Chop the garlic finely.
Chop the potatoes into small cubes.
Slice the carrots into thin slices.
Chop the lamb into 3cm (1in) cubes. |
METHOD

Roll the cubed lamb in the flour so that all the lamb is covered (keep the remaining flour). Pour
half the olive oil into a pan on a medium heat. Fry the lamb for four or five minutes, stirring
frequently, until it is browned. Place the lamb in the pre-heated slow cooker on a high heat and
pour on the white wine. |

Fry the streaky bacon until it just begins to crisp, chop into small pieces and add to the slow
cooker.
Fry the onions and garlic for four minutes in the remaining oil on a medium heat. Add the tomatoes,
stock, salt and pepper, then cook for four more minutes until it is all warmed through, then add to
the slow cooker. Sprinkle the saved flour into the slow cooker and stir well. |

If you are cooking the one-pot version of this recipe, add the carrots and potatoes at this point.
After half an hour turn the slow cooker to low heat. Leave it to cook for around 7 hours until the
lamb tender. This recipe will continue cooking for another two hours if you want.
Five minutes before serving, finely chop the rosemary and stir into the slow cooker. |
If using the one-pot version of this recipe, add the frozen peas / sweet corn half an hour
before serving.
Garnish with the chopped parsley and serve into warm bowls.
