These chicken kebab spirals are really quick but
give a very unusual and tasty result. Strips of chicken spiralled
round tasty bacon, brought to life with a layer of tomato paste. Great
looking, great Italian taste.
They are great when cooked under the grill or over a
barbecue. |

INGREDIENTS
This Chicken Kebab Spirals recipe will make four four kebabs, one per person.

For this recipe you will need four skewers at least 25cm (10 inches) long.

Trim the bacon and chicken
breasts if they have too much fat on them. Place each chicken breast
between two sheets of cling and firmly hit it with a rolling pin until it
is flattened out thin.
See the picture on the left to get an idea of how thin the chicken
should be. |

Set the grill to it's
highest heat now. Mix the tomato
puree and the crushed garlic (skinned) in a bowl. Spread the tomato and garlic
mixture evenly over each of the chicken breasts. Make sure the
mixture is spread to edges of the chicken. This will give the attractive
swirl-look when it is all cooked. |

Place a slice of bacon on
each chicken breast and cover with the leaves of basil. |

Roll up each of the four pieces of chicken - do this reasonably
firmly but not so firmly that the tomato puree is squashed out.
This is a bit tricky but don't worry if it's not perfect, the
cooking process will cover a multitude of sins! |

Roll up each of the four pieces of chicken - do this reasonably
firmly but not so firmly that the tomato puree is squashed out.
Cut each rolled up chicken breast into three pieces. Use a sharp
knife to avoid squashing the rolled up chicken.
Turn each piece of rolled up chicken on it's side and pass the
skewer through it. Put three rolls of chicken on each skewer. |

Place the loaded skewers in a baking tray drizzle on the olive oil
and place under the pre-heated grill for fifteen to twenty minutes.
Turn over the skewers half way through cooking to ensure they are
evenly cooked.. |

Voila! Serve the Chicken Kebab Spirals with a fresh salad, rice
or just about anything else from chips to grated cheese. One word
of warning, they are quite hard to eat from the skewers so plates
may be needed! |
