This is a very fruity Pork Casserole. We served it with wild rice.
It would also be extremely tasty with new or mashed potatoes and lots of
fresh vegetables. |

INGREDIENTS

WHAT SPECIAL KITCHEN EQUIPMENT
Slow Cooker

Switch the cooker on to low heat.

100 g mushrooms, sliced |

750 g pork fillet cubed |
1½ lb pork fillet cubed |
25 g plain flour |
1 oz plain flour |
600 ml vegetable stock |
1 pint vegetable stock |
30 ml red wine |
2 tbsp red wine |
432 g canned pineapple chunks |
15¼ canned pineapple chunks |
salt and ground black pepper |

Preparation Before Cooking
Trim the pork into 1
in pieces.
Thinly slice the onions.
Crush the garlic.
Peel, de-seed and slice the peppers.

Heat one tablespoon of olive
oil in a frying pan on medium heat. Add the sliced onion and crushed
garlic and cook for 2 - 3 minutes until soft.

Add the the peppers and mushrooms and cook for a further 1 - 2
minutes.
Transfer the ingredients to the cooking pot. |

Coat the pork in the flour. The easiest way to do this is to put the
flour and pork into a plastic bag and give it a good shake. |

Heat another one tablespoon of oil in the pan and add the pork. Fry
the pork and cook until brown . |

Add the pineapple to the pan and stir well. |
 |
Put in the stock, red wine and seasoning, mix well and bring to the
boil. |
 |
Transfer to the cooking pot.
Cover with the lid and leave to cook for about
3 - 4 hours stirring occasionally. |
 |
Serve with rice or potatoes and fresh vegetables.
An absolutely delicious meal fit for a king. |
