 Lime and Coriander Rice Recipe

Coriander and lime are key ingredients in Indian cuisine.

They combine well and are exceptional flavours when added to plain long grain rice.

INGREDIENTS

Metric

Basmati or American rice 14 oz 400 grams
Water 27 fl oz 800 ml
Salt ½ level teaspoon
Limes 2
Coriander leaves A good bunch (see picture below)

Special Equipment
Largish pan with a lid

Method
Bunch of coriander leaves Pick the leaves of fresh coriander to make a good bunch (click left hand picture to enlarge it). Finely chop the leaves.

Grate off the glossy surface (not the white pith below) to give you the lime zest.


Many of our long grain rice recipes use the same method to cook the basic rice.

Click here for instructions and pictures describing exactly how to cook the perfect long grain rice. When you have cooked the basic rice then come back here to complete your coriander and lime rice.


Sprinkle the the chopped coriander leaves and lime zest on the rice and gently stir them in.

Cut both limes in half and squeeze the juice over the surface of the rice.

Decorate with a few whole coriander leaves.
