Lime
and Coriander Rice Recipe |

Coriander and lime are key ingredients in Indian cuisine.
They combine well and are exceptional flavours when added to plain long grain rice.

½ level teaspoon |
Limes |

Coriander leaves |
A good bunch (see picture below) |

Method

Pick the leaves of fresh coriander to make a good bunch (click left hand picture
to enlarge it). Finely chop the leaves. Grate off the glossy surface (not the
white pith below) to give you the lime zest. |

Sprinkle the the chopped coriander leaves and lime zest on the rice and gently stir them
in.
Cut both limes in half and squeeze the juice over the surface of the rice.
Decorate with a few whole coriander leaves. |
