Double cream
142ml / ¼ pint
Dry white wine
125ml / 4fl oz
Gruyere cheese grated
350g / 12oz
Paprika pepper

1 baking dish
You need floury potatoes for this recipe namely Estima, King Edwards,
Maris Piper or Desiree; they are all available from supermarkets.
Heat the oven to 200°C / 400°F / Gas Mark 6.
Method for Cheesy Potatoes with Bacon
Dice the potatoes into chunks of about ½ inch. Boil them in a
large pan for 5 minutes, drain and put back into the pan.
Melt the butter in a saucepan and add the chopped
onions and cook till soft for about 5 minutes. Mix in the
bacon and cook for a further 5 minutes.
Mix the bacon and onions into the pan with the potatoes.
Stir in the cream, wine and most of the cheese add a little
paprika and mix well.
Put into the baking dish, spreading it out evenly,
then sprinkle the top with the remaining cheese. Cover with
silver foil and put in the oven for 25 minutes.
Remove the foil and sprinkle with a little more
paprika and cook for a further 20 minutes until the cheese is melted
and golden brown.
Serve with crusty warm bread, they'll certainly come
back for more.
You can make this with any traditional semi-soft
Swiss cheese which is good for melting, i.e. Raclette, reblochon or
taleggio if you can source it in the supermarkets.
