Bacon and Banana Diablo Toasted Sandwich
This recipe is toasted sandwich making taken to its very best. It takes 10 minutes to prepare but it is worth every minute!
You have here the perfect "ying and yang" of toasted sandwiches. The salty taste of the bacon combined with the swetness of bananas. All enclosed in toasted bread. It may sound an unusual taste combination but, in fact, it is sublime.
Two slices of bread.
1 medium banana
3 slices streaky bacon
Small amount of butter or margarine
Start frying the streaky bacon in a pan on a medium heat. Fry until the bacon is crispy, this takes about six minutes.
While the bacon is frying, peel the banana and mush is up in a bowl until becomes smooth and creamy.
Cut off four corners off the bread slices.
When the bacon is cooked, chop it into small pieces.
Spread a light coating of butter / margarine over one side of each slice of bread. Place one slice of bread in the Diablo (buttered side down) and add the chopped bacon. Pile on the banana and slightly firm it down.
Now place the second piece of bread on the top (buttered side upwards) and clamp shut the Diablo. Scrape away any excess bread from round the edges.
STEP 2Close the lid of the Diablo and cook on a medium heat (pre-heated by frying the bacon) for three minutes each side until the bread is toasted and golden brown.
