Two slices of white or brown bread.
Quarter of a medium onion.
60g / 2 oz of cheese, cheddar is a good choice.
Teaspoon of pickle, we used homemade tomato pickle
Grate the cheese.
Top and tail then peel the onion. Finely chop the onion.
Mix the cheese, onions and pickle
Cut off four corners from the slices of the bread.
For a crisper bread, spread butter on one side of each slice of bread.
Pre-heat the Diablo on your cooker, stove or barbecue.
Place one slice of bread (buttered side down) in the Diablo, pile up the cheese, onion and pickle filling (the higher the better) and then place the other slice of bread (buttered side up) on top. Clamp down the Diablo closed and trim off any excess bread.
STEP 2Cook for about 4 minutes on each side but turn every minute or so and open the Diablo every couple of minutes; the toasted sandwich is ready when the bread is toasted golden brown.
