This is so delicious that you may as well plan to cook two of them right from the start! They do require the mushrooms and bacon to be fried off first but it's well worth the effort.
Two slices of brown bread.
Four slices of streaky bacon
Four medium sized mushrooms
30g / 1 oz cheddar cheese
1 tablespoon of olive oil
Peel the mushrooms and slice them.
Put the bacon and mushrooms in a pan, add a tablespoon of olive oil and fry on a medium heat for around eight minutes until the bacon starts to crisp. Turn the bacon a couple of times.
When cooked, remove from the pan and allow to cool for a minute. Mix all the ingredients together and pile them on a slice of bread on the Diablo.
Place the other slice of bread over the top and clamp down the Diablo. Scrape away the excess bread. Cook the Diablo sandwich for about four minutes each side.
Turn frequently checking to see when both sides of the bread have been toasted golden brown. Serve immediately.
