Sausage, haricot bean and tomatoes bake

An extremely tasty, filling, cheap and easy to cook recipe. Fry off the onions and sausages, add them to a casserole dish with tomatoes, herbs and sliced potatoes. Cook for 40 minutes, sprinkle on some cheddar and grill for a hearty meal.

Oregano ½ teaspoon dried or 1 teaspoon fresh
Basil ½ teaspoon dried or 1 teaspoon fresh
Cheddar cheese

2 ounces

5 tablespoons

Salt and pepper

PREPARATION

Sliced potatoes and sausage

Finely chop the onions and garlic.
Chop the sausages into 1½ in / 4 cm lengths.
Slice the potatoes (click the picture on the left to enlarge it).

COOKING EQUIPMENT
1 Medium-sized frying pan
1 oven proof dish

How To Cook This Recipe
 
Add 3 tablespoons of oil to a frying pan. Heat to to a medium-high heat. Add the onions, turn frequently and fry until they are golden brown. This will take 15 minutes. Remove the onions, add 2 tablespoons of oil, add the sliced sausages and fry for about 8 minutes turning frequently until they are coloured brown. Sliced sausages frying

  Preheat the oven to 190°C / 370°F / Gas Mark 5
 
Ready for baking Put the sausages, fried onions, haricot beans, chopped tomatoes, herbs, salt and pepper in a casserole dish and mix gently with a fork.

Place the potato slices over the mixture so that they cover it all. Put the casserole dish in the pre-heated oven for 55 minutes.

 
When cooked, remove from the oven, grate the cheese over the top and put under the grill until the cheese browns for about 4 minutes.
Serve by itself on warmed plates. Any remaining can be covered and refrigerated. Eat the next evening after microwaving for about four minutes. Supremely delicious.
