Pork sausage Cassoulet
Pork Cassoulet is a French dish that's been a classic for a long time. Meaty pork sausages, bacon and beans make this a delicious meal.

Meaty pork sausages 8 8
Tinned Cannellini beans or similar white beans

12 oz

350 g

Streaky bacon or pancetta 4 to 5 oz 130 g
Medium onions 2 2
Medium carrots 1 1
Garlic clove 1 handful 1 handful
Tomato puree 2 level tablespoons 2 level tablespoons
Fresh or dried thyme 1 teaspoon dried, 1 tablespoon fresh 1 teaspoon dried, 1 tablespoon fresh
Bay leaves 3 3
Chicken stock 1 pint 600 ml
Red wine ¼ pint 150 ml
Fresh bread crumbs 4 oz 110 g
Olive oil 1 tablespoon 1 tablespoon
Salt and pepper To taste To taste

COOKING EQUIPMENT
1 medium frying pan
1 casserole dish

PREPARATION
Cut the streaky bacon into rough squares.
Peel, top and tail and finely chop the onion
Peel, top and tail and slice the carrots
Peel and finely chop the garlic
Make the bread crumbs, use a food processor or lightly toast and crumble with your hands

Method

Heat the olive oil in a frying pan to a medium heat and add the sausages.

Keep turning them often as they cook. You want them to be browned on all sides, it makes them look far more attractive when the dish is served. This should take around 10 minutes.

Set the oven pre-heating to 170°C / 325°F / Gas Mark 3.
 
Streaky bacon being fried Take the sausages from the frying pan and put them in the casserole dish. Turn the heat up a bit and add the streaky bacon to the frying pan.

Toss the bacon round the pan as it cooks. After about 5 minutes the edges will go brown and slightly crispy.

 
Take the fried bacon from the pan and add it to the casserole dish. Turn the heat down medium low and add the chopped onions.

Cook for about 10 minutes, turning frequently, until they have softened but not turned brown. Add the chopped garlic and cook for a further minute.

Pork sausage cassoulet Add the onions, and all the remaining ingredients, except the breadcrumbs, to the casserole dish, cover and put in the pre-heated oven for 2 hours.

Remove the casserole dish from the oven, sprinkle the bread crumbs over cassoulet and place under a medium grill for 5 minutes.
