Coconut Topped Cupcakes Recipe |

COOK'S NOTES
This recipe is a variation on the basic cupcake recipe. Make the mixture
as shown by clicking here, then
come back to this page to complete the Coconut topped cupcakes.
INGREDIENTS
When you have made the basic cup cake it needs to be topped with icing
of some type to give a surface for the coconut to stick to. Either make
butter icing or
cream
cheese icing. Click either of them to go to the page to make the
icing.
For the coconut topping you will need one packet of desiccated coconut.

METHOD
Make the basic cup cakes then ice
them using the links in the Ingredients paragraph above.

Use a knife dipped in warm water to spread the a thick layer
of icing over the top of the cupcake. It's not important to get
the icing absolutely even. Sprinkle the desiccated coconut
over the top of the icing and gently firm it in with your hands.
Decorate with sugar shapes, glace cherries, Smarties, M&Ms, or
anything you can think of. |
